Light, airy choux pastry filled with silky vanilla cream and finished with a rich chocolate glaze—fluffy, decadent, and dangerously addictive.

  1. 1.Make the choux pastry:
  2. 2.In a saucepan over medium heat, combine butter, water, and salt. Bring to a simmer until butter is fully melted.
  3. 3.Add the flour:
  4. 4.Stir in flour all at once and mix vigorously until the dough pulls away from the sides and forms a smooth ball.
  5. 5.Cool slightly:
  6. 6.Remove from heat and let cool for 5 minutes so the eggs don’t scramble.

  8. 8.Beat in eggs one at a time until the dough becomes smooth, glossy, and pipeable.

  10. 10.Preheat oven to 400°F. Pipe or spoon dough into small mounds on a parchment-lined baking sheet. Bake for 25–30 minutes until puffed and golden. Do not open the oven early.
