Moroccan Kefta Rice Bowl with Yellow Turmeric Rice

Directions

Tender Moroccan-spiced beef meatballs simmered in rich tomato sauce over vibrant yellow turmeric rice, finished with fresh herbs and cool yogurt. Bold, colorful, and deeply comforting.

  1. 1.Make the Rice
  2. 2.Heat butter or oil in pot over medium heat.
  3. 3.Add onion and cook 4 minutes until softened.
  4. 4.Add garlic, turmeric, cumin, salt, and pepper. Stir 30 seconds.
  5. 5.Add rinsed rice and stir 1 minute to coat.
  6. 6.Add stock or water. Bring to boil.
  7. 7.Cover, reduce heat to low, cook 15 minutes.
  8. 8.Remove from heat, rest covered 10 minutes. Fluff with fork.
  9. 9.Make the Meatballs
  10. 10.Combine beef, onion, garlic, parsley, salt, pepper, cumin, paprika, coriander, and cinnamon.
  11. 11.Roll into golf-ball-size meatballs.
  12. 12.Brown the Kefta
  13. 13.Heat olive oil in skillet over medium-high heat.
  14. 14.Brown meatballs 5–6 minutes, turning often. Remove and reserve.
  15. 15.Make Sauce
  16. 16.In same pan, add onion and cook 3 minutes.
  17. 17.Add garlic, crushed tomatoes, tomato paste, cumin, paprika, salt, and water. Simmer 8 minutes.

  19. 19.Return meatballs to sauce. Cover and simmer 12–15 minutes until cooked through.
  20. 20.Serve
  21. 21.Spoon turmeric rice into bowls.
  22. 22.Top with kefta and sauce.
  23. 23.Add yogurt, herbs, and lemon wedges.
