- 2.Heat oil in a large skillet over medium-high heat. Add diced potatoes, season with salt and pepper, and cook for 8–10 minutes until golden and tender. Remove and set aside.

- 4.In the same pan, add andouille sausage. Let it sear and render its fat, allowing that flavor to build. Cook until browned and fully cooked. Remove and set aside.
- 5.Build the base:
- 6.Add onion, bell pepper, and celery to the same pan. Cook until softened, about 4–5 minutes. Stir in garlic and cook for 30 seconds until fragrant.

- 8.Add rice to the pan and stir for 2 minutes to lightly toast and absorb the flavors.
